I'm dealing with a lot of anxiety and racing thoughts that I'd like to manage using meditation, so hopefully you can understand why I'd like to meditate a lot. I'd like to know if it's possible to meditate too much. I'd like to do it for at least an hour a day.

You'd have to meditate for many hours each day for it to be too much. By overdoing it, you'd very likely start experiencing a general dullness of mind. The mind is made to think, after all - so all thinking is not bad.
It's when thinking becomes uncontrolled (which is normal for most of us) that we need to be able to manage it better. Meditation can help with this.
I would suggest starting with a manageable amount of time which you can regularly commit yourself to - whatever that is. Then, as you find yourself nearing the end of your allotted time, if you really feel you'd like to continue, there is absolutely no harm in doing so. Or if you feel like stopping, that's fine too.
You might find in this way that you gradually work up to a longer meditation period which you truly feel like doing and, just as importantly, are actually capable of doing.

I suffer from anxiety and depression myself and find you can meditate and do what you need to do at the same time. Perhaps that is an advanced way to meditate. I find meditating simply means tuning into your breathing, relaxing and releasing the tension from the body so that you're refreshed and rejuvenated. I have meditated while washing dishes, folding laundry or mopping my kitchen floor. I think there are many many ways to meditate and sitting with your eyes closed is just one way.
Not sure that's possible. I think if you meditate too much you fall asleep and the meditation ends then and there. I think people have confused meditating with daydreaming and some say that to do it often is too much while others believe meditation and daydreaming opens the mind to be more creative and available to explore new things. Not sure if there is such a thing as meditating too much. I would think only you'd know the answer to that question. Anything done to excess can and does interrupt one's daily routine, so, if you're missing work, sleep, not eating or you're turning down invites where you normally wouldn't, then step back and take stock of whether or not it's becoming a problem, if it is then you can control it from that point.
